Roasted Tofu & Peanut Noodle Salad

This Asian inspired salad is crunchy, salty, sweet – and healthy.  For deeper flavour pour the sauce on  the noodles while still warm.  To keep it gluten free make sure you use the Tamari version of Soy  Sauce.  It’s easily available in supermarkets and delis.

  • 1. Blend all the ingredients for the peanut sauce until smooth - keep to one side
  • 2. Cook the pasta in a large pan of boiling salted water
  • 3. Meanwhile fry the Tofu in vegetable oil until crisp and golden round the edges. Drain on kitchen paper and put in a bowl with a few tbsp of the peanut sauce
  • 4. Assemble the salad while the pasta is still warm. Check the seasoning and arrange in a dish and sprinkle a few peanuts on top
